Christmas Brownies: Gingerbread Boy

Christmas brownies have never been easier than this adorable Gingerbread Boy Brownie Pizza! All you need is a brownie mix, a tub of frosting and some candy to turn this brownie into a gingerbread boy or girl. This Christmas brownie idea is is very kid friendly and perfect for a Christmas dessert table!

Have you ever used a pizza pan for something other than pizza? I have loved making giant cookie pizzas, fruit pizza and brownies using mine. If you are short on time for making cookies or just want something new and different, serving your favorite recipes in a different form is a great way to switch things up!
Christmas Brownie Ingredients
- fudge brownie mix for a 13×9 inch pan
- eggs
- oil
- water
- white frosting (I used white cooking icing)
- black gel icing or frosting (I used black gel icing)
- large gumdrop candies (or other preferred candies)
This brownies for Christmas recipe is really versatile and can be made into other designs. Instead of a gingerbread theme like we did for these gingerbread cake pops, try making a reindeer. Opt for vanilla frosting and make a snowman face. Use orange gel icing for the carrot nose!
How to Make a Brownie Pizza
A couple of years ago I made a pumpkin brownie pizza, a fun fall dessert. It works great with a brownie mix. Did you know that box of brownie mix (13 x 9 inch pan size) will bake perfectly in a 12 inch pizza pan if you prepare according to package directions for fudge-like brownies? Just make sure the batter doesn’t extend out beyond the lip that surrounds the pizza pan so it doesn’t spill over the edge.
How to Decorate Brownies for Christmas
Once your brownie has cooled, it is time to decorate! Start spreading your chocolate frosting evenly over the top.
You can make your gingerbread face freehand, or you can use a toothpick to mark out your design. I found this easier and any mistakes could be fixed by spreading out the frosting again.
Kitchen Tip: Use a round decorator’s tip (normally for frosting) to create a perfectly round circle guide for the eyes.
Be careful to not go too deep with the toothpick. Do not dig into the brownie when marking out your design.
Use white cookie icing to add to your design. While you can really use any type of white icing, I found this easy to work with and liked the consistency. Fill in eyes and smile with black frosting. I used this black gel icing.
Add large gumdrops on both sides of the smile. I found these extra large gumdrops at Walgreens. Other candies can be used in place of the gumdrops such as Dots, red coins, peppermint M&M candies, etc. You could also cut a standard size marshmallow in half and press the cut side down.
Cut into slices before serving.

Christmas Brownies are easy when you make a brownie pizza! This cute gingerbread boy is a quick way to to turn a simple brownie mix into something special for the holidays. Have fun decorating and add as much detail as you want with this kid friendly Christmas brownie recipe!
Ingredients
- 1 package fudge brownie mix 13x9-inch pan size
- 2 eggs
- 1/4 cup water
- 1/2 oil
- 1 16 oz tub chocolate frosting
- white cookie icing
- black gel icing
- large gumdrop candies
Instructions

Preheat oven to 350° F. Spray 12-in. pizza pan with cooking spray.

Prepare your brownie batter according to package directions for fudge-like brownies using eggs, oil and water.

Spread batter on pizza pan, being careful to not let the batter go over the sides. (Try to stay within 1 in. of edges if possible)

Bake 20-25 minutes or until a toothpick inserted in center comes out clean.

Cool completely in pan on a wire rack.

Spread chocolate frosting over top of brownie.

Using a toothpick, mark out your gingerbread design in your frosting, including eyes and smile. (For more rounded eyes, use a decorating tip to outline)

Fill in eyes and mouth with black gel icing.

Add in any gingerbread details you like with white frosting such as outlines, bow tie, etc.

Add a large gumdrop to each side of the mouth.

Slice to serve.
Recipe Notes
