Finding time to sit down for dinner during the summer months with kids can be tough. But honestly, I don’t always want to. This is the perfect time of year to enjoy our meals in the outdoors and on the go. And even when we are at home on a hot day, I really appreciate having a night off from both cooking and clean up afterwards.

A couple of weeks ago, I couldn’t decide on what to have for dinner. It was very hot outside and the idea of being over a hot stove or turning the oven on was not appealing. I already knew of the effortless meals program so I headed out to my local Walmart to pick up dinner.
I grabbed my middle son’s favorite, rotisserie chicken, and picked out a coke product and a side. (With this meal deal you can choose one side from potato salad, macaroni salad or coleslaw.) I topped it off with some fresh fruit and dinner rolls. Because all of these items are near each other in the front of my store, I was in and out in just a few minutes.
When I arrived home, putting dinner together was easy. I simply cut up half the watermelon while my husband cut the chicken. I decided we should have a picnic outside to enjoy the fresh air.
I found some leftovers of our favorite coleslaw and added it to our nice spread. Our meal was simple and delicious!
My kids may think it is a novelty to eat outside in the backyard, especially when we use our picnic blankets. It is such a simple thing, but they love it.
The watermelon was very ripe, juicy and simply perfect. The chicken was tender and full of flavor. My husband devoured the potato salad.
The kids were happy, content and well behaved.
After dinner we stayed outside to play as a family. Clean up was a breeze so I could spend more time doing more important things, like pushing my little guy in the swing. (Seriously, that kid could swing for hours.)

Anything you can do to simplify dinner time is wonderful. As a mom with a full time job outside the home, dinner time is always the most stressful time of day for me. Rotisserie chicken is one of my favorite ways to make sure I don’t stress myself out over dinner. I love that you made it fun for your kids, too!

Your boys are just too precious. I make this roasted chicken sometimes too & buy the macaroni & cheddar salad (hubby likes that one), and then buy some half corn on the cob. Done in about ten! ehehhehe love it.

With kiddos a grab and go meal is great every now and then! I also love freezing crock pot meals ahead of time to make dinner easier – just throw thaw the day before, toss in crock pot & voila!
