Orange Creamsicle Tarts

Orange Creamsicle Tarts

Ingredients

  • 4 ounces cream cheese softened
  • 1/2 cup butter softened
  • 1 cup all purpose flour
  • 2 tablespoons sugar
  • 8 ounces heavy whipping cream
  • 2 tablespoons powdered sugar
  • 4-6 tablespoons freshly squeezed orange juice use 2-3 clementines
  • 1 clementine thinly sliced and quartered for garnish

Instructions

  1. To make the basic tart filling, preheat oven to 450
  2. With a mixer, beat cream cheese, butter and sugar until smooth. Add flour and mix until dough forms. Cover and chill one hour, or overnight.
  3. Shape dough into 1" balls and place in an ungreased mini muffin pan. Using a tart shaper dipped in flour, press into tart shape.
  4. Use the tines of a fork to pierce the bottom of each tart. Bake 10-12 minutes. Cool completely.
  5. To make orange filling, whip the whipping cream and powdered sugar until stiff in large bowl with mixer.
  6. Stir in orange juice and mix well.
  7. Spoon onto prepared tarts and garnish with orange slice.
  8. Refrigerate until serving.
