Orange Creamsicle Tarts

If you are looking for a fun, summery, fresh and delicious dessert, look no further than these Orange Creamsicle Tarts. These mini tarts from Kari Stroschein are made with just a hint of sweetness and include a fantastic homemade tart shell. According to Kari, it’s hard to eat just one. Serve these at your next celebration, cookout or just to surprise your family with a special treat.
Shake it up a bit and try this orange tart instead of the typical strawberry, blueberry, kiwi, etc that you find with most tarts.
Make quick and simple work of filling the tarts by using a cookie scoop or small ice cream scoop. Garnish your platters with additional fruit slices and fresh mint for a pop of color.
You can easily swap out the clementines for other favorite fruits. Try serving multiple flavor options and combinations to spoil your guests!
Orange Creamsicle Tarts
Ingredients
- 4 ounces cream cheese softened
- 1/2 cup butter softened
- 1 cup all purpose flour
- 2 tablespoons sugar
- 8 ounces heavy whipping cream
- 2 tablespoons powdered sugar
- 4-6 tablespoons freshly squeezed orange juice use 2-3 clementines
- 1 clementine thinly sliced and quartered for garnish
Instructions

To make the basic tart filling, preheat oven to 450

With a mixer, beat cream cheese, butter and sugar until smooth. Add flour and mix until dough forms. Cover and chill one hour, or overnight.

Shape dough into 1" balls and place in an ungreased mini muffin pan. Using a tart shaper dipped in flour, press into tart shape.

Use the tines of a fork to pierce the bottom of each tart. Bake 10-12 minutes. Cool completely.

To make orange filling, whip the whipping cream and powdered sugar until stiff in large bowl with mixer.

Stir in orange juice and mix well.

Spoon onto prepared tarts and garnish with orange slice.

Refrigerate until serving.
