Potato Ham Chowder with Betty Crocker Specialty Potatoes Recipe

I love making soup for my family. What is not to love about a meal which can be created in one pot and is easy to work around schedules? It makes a no fuss solution for family get togethers simply by using a crock pot to keep it warm and is perfect for leftovers. I love that comforting feeling as nothing reminds me of the change of seasons and cooler weather than a creamy soup that is nice and hearty.
If you are searching for a recipe that will put a dinner on your table with almost no effort, I highly recommend this Potato Ham Chowder I put together, inspired by other recipes from Betty Crocker. By simply using Betty Crocker Specialty Potatoes the need to slice your own potatoes has been eliminated and the seasoning packet within adds an amazing flavor to this soup! Trust me, it tastes absolutely amazing and was a huge hit at our last family party!
Potato Ham Chowder
Ingredients
- 4 cups hot water
- 1 box 4.7 oz Betty Crocker® au gratin potatoes
- 1/2 teaspoon salt
- 1 cup frozen corn
- 1 cup chopped celery
- 1/3 cup chopped onion
- 1 cup cubed cooked ham
- 2 cups half and half
- 1 cup milk
Instructions

Heat water and potatoes and salt to boiling in 3-quart saucepan. Boil for 20 minutes then drain.

Stir in sauce from boxed potatoes and all remaining ingredients. Heat to boiling over medium-high heat. Stir periodically.

Reduce heat and simmer uncovered until potatoes are tender, stirring occasionally. (Approximately 10 minutes).
Feel free to play around with different vegetables and try chicken or turkey instead of ham! Crumbled bacon would also taste great on top.
