Chicken Pear Walnut Salad: Easy One Bowl Meal Idea

Lately I’ve been in a lunch rut. When I open my refrigerator come lunch time, I’m at a loss at what to eat. I want something that will fill me up and last until dinner without stumbling into a food coma afterward. I need something that will perk me up and give me energy. An afternoon nap sounds great, but I’ve generally got work to get done or an adorable non-napping little boy who needs attention.So what is a girl to do? Obviously I needed a little inspiration. I love salads and thanks to Wish-Bone® Italian Dressing and Tyson® Grilled & Ready® Chicken, I’ve got some fresh ideas. Inspired by their one-bowl meals, I came up with this easy Chicken Pear Walnut Salad.

Perhaps you are thinking a salad like this takes too much time out of your busy schedule, but trust me, it is so quick and easy!
To prepare, I headed out to my local Walmart for some of my favorite salad ingredients loaded with protein including Tyson® Grilled & Ready® Chicken and walnuts! I picked up some gorgeous fresh pear, yellow cherry tomatoes, red onion and mushrooms to go with my spinach and kale mix. I also added to my cart dried cranberries and Wish-Bone® Italian Dressing. It is packed full of herbs, seasonings and flavors for an extra zesty boost of flavor so I knew it would taste great on my salad. Normally I’d never miss an opportunity to add cheese, but with so many great toppings I didn’t even need it.
By using Wish-Bone® Italian Dressing and Tyson® Grilled & Ready® Chicken, the prep time was minimal. The chicken was heated up in the microwave while I set to work cutting my onion and pear. Everything else was all ready to go so assembly took only about five minutes.
I had so much fun layering my one meal bowl. It really is no surprise that visually appealing foods are more enjoyable to eat. Trying a new presentation can take a simple meal from good to great.
I was surprised by just how much flavor was packed into this salad. I love the different textures. The tangy, robust flavor of the dressing matched perfectly with the rest of salad. It was a sweet surprise every time I had a bite with pear or cranberries. This salad filled me up and gave me the energy I needed to get through my work day!
Easy Chicken Pear Walnut Salad
Ingredients
- 12 oz. Tyson® Fully Cooked Grilled & Ready Chicken Breast Strips prepared according to package directions and cut into bite-sized pieces
- 1 1/2 cups cherry tomatoes
- 1 cup fresh sliced mushrooms
- 2/3 cup walnuts
- 1/2 cup chopped red onion
- 1/2 cup dried cranberries
- 1 large ripe pear quartered and cut into slices
- 1 bag mixed salad greens kale, spinach, arugula
- 1/2 cup Wish-Bone® Italian Dressing
Instructions

Combine all ingredients in one large bowl or divide ingredients among four bowls, arranging in fun pattern if desired.

Top with dressing before serving.
