Cinnamon Roll Coffee Cake

I’ve always been a huge fan of coffee cake. Who doesn’t love an excuse to eat cake with coffee in the morning? I also prefer streusel toppings or glazes instead of traditional buttercream frosting like in this blueberry buckle recipe. This cinnamon roll coffee cake recipe is a dream come true! Cinnamon Roll Coffee Cake Ingredients:
To make this cinnamon roll coffee cake with cake mix as the base, you’ll need the following ingredients:
- yellow cake mix
- vegetable oil
- eggs
- sour cream
- chopped pecans
- brown sugar
- cinnamon
- nutmeg
- powdered sugar
- vanilla
- milk
Sour cream is a great way to make any cake extra moist but if you don’t have any you can substitute plain yogurt. You can also use walnuts instead of pecans if you prefer. If you are avoiding gluten, try this gluten-free apple cake which also features a cinnamon streusel topping.
How to Make Easy Cinnamon Roll Coffee Cake
In small bowl, add brown sugar, pecans, cinnamon and nutmeg. Stir to mix.
Preheat oven to 350 degrees Fahrenheit. Grease and flour a 13 x 9 inch baking dish. (Can also use a baking spray with flour built in if preferred.) In large mixing bowl, add cake mix, oil, eggs and sour cream. Beat on low for 2 minutes. Pour batter into prepared baking dish.
Sprinkle brown sugar mixture over batter evenly.
Using a butter knife, lightly swirl brown sugar mixture into batter to avoid it settling into the bottom during baking.
Bake 40 to 50 minutes uncovered until golden brown and a toothpick inserted in the center comes out clean.
In medium bowl, whisk milk, powdered sugar and vanilla. Drizzle over cake.
Cool on wire rack for at least 15 minutes before cutting. Enjoy a piece of this cake with your favorite coffee or tea such as this chocolate chai latte.
Best served warm. Can store covered at room temperature for a couple of days but if you want it to last longer, best to store in the refrigerator.
