Tomato Cucumber Salad Ingredients

What do you do when you have excess super sweet tomatoes for a veggies skewers snack post?  (Thanks SUNSET!) You make a delicious tomato cucumber salad of course! I stopped off our local farmer’s market and picked up fresh basil and oregano along with cucumbers to pair with my tomatoes.

For this tomato salad I used the following simple ingredients:

  • cherry tomatoes: You can substitute your favorite style of tomato. I also enjoy roma tomatoes for this salad.
  • cucumbers: I like to use a cucumber with thinner skins and smaller seeds like English cucumbers or Persian cucumbers. Otherwise, I recommend peeling your cucumbers so they are easier to eat.
  • red onion: I love the color and flavor of red onions but sliced green onions would also be delicious!
  • fresh herbs: I used basil and oregano but you can play around with your favorite herb combinations. Fresh parsley would also be wonderful.
  • sea salt and freshly ground pepper
  • balsamic vinegar: You can also use red wine vinegar but keep in mind that red wine vinegar is usually sharper and less sweet than balsamic vinegar. You may need to adjust the quantity based on your personal taste preferences. 
  • olive oil

For the best salad, you’ll want extra fresh produce. Quality vegetables make for the best salad and fresh herbs definitely take it to a new level. I did include red onion to add extra zing and color but you can leave them out if you aren’t an onion fan.

The best part about this salad recipe is you can put it together in just 10 minutes. You can cut your tomatoes in half so they soak up even more of the dressing flavors. However, this will also cause your tomatoes to break down faster. I knew I wanted to be able to keep this salad for more than a day so I did not cut my tomatoes.

Ingredients

  • 1 large cucumber sliced and cut in half
  • 3 cups cherry tomatoes
  • 1/2 cup sliced red onion
  • 2 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • 2 teaspoons chopped fresh basil
  • 1 teaspoon chopped fresh oregano
  • salt and pepper to taste

Instructions

  1. Place cucumber and cherry tomatoes in medium bowl.
  2. Whisk olive oil, vinegar, basil and oregano, salt and pepper together in small bowl.
  3. Pour over tomatoes and cucumbers and gently toss.
  4. Refrigerate at least one hour before serving.
