VELVEETA and Ro*Tel Broccoli Cheese Soup {Recipe} #velveetarotel

I love an easy soup that can be made in very little time and uses leftover ingredients. This cheesy broccoli soup I put together included leftover turkey from Thanksgiving and bacon from our breakfast. Because of the versatility, feel free to change things up with different vegetables to suit your family or what you have available. Leftover chicken would work great or simply skip the meat altogether. And even better, it is creamy from the VELVEETA® and super flavorful from the Ro*Tel®, no need to add any seasoning. Keep in mind however that the original Ro*Tel® does give it some kick so if you have family members who need a tame soup, consider using the mild version instead.

Ingredients:

1 lb (16 oz.) package of VELVEETA®, cubed

2 cans chicken broth

1 pkg frozen broccoli

1 cup frozen corn

1 can Ro*Tel® diced tomatoes with green chilies

1 cup leftover chicken/turkey, broken up (if desired)

6 slices of crumbled cooked bacon for garnish

Directions:

Over medium heat, cook chicken broth and frozen vegetables for 8 minutes. Add VELVEETA® and stir until smooth and completely melted. Add meat if desired. Stir and cook 5 minutes or until hot. Top with crumpled bacon.

This soup is delicious, especially with the bacon, VELVEETA® and Ro*Tel® combination. My husband and I loved it. Next time however I will serve it with some fresh bread as I must have went through two glasses of milk with the kick of flavor!

  1. Thanks so much! We used to have homemade Broccoli Chicken Cheese soup for Christmas Eve but have not for about 5 years. My youngest JUST asked what we were having for dinner this year and I was surprised she was so hoping for this! I amgoing to try it with Velveeta this time…at least use half that and half real cheddar. The picture made me SO hungry for it NOW!

  2. This recipe was delicious… I wasn’t sure when to put in the Rotel tomatoes so I cooked the veggies and broth, added the cheese until melted then added diced rotisserie chicken and rotel tomatos. I also must add, I had to double the recipe and added 1 smaller block of Jalopena flavored velveeta on top of the 2lb of regular velveeta and some green onion… it added an extra kick of wow…. and served with warm french bread.
