Air Fryer Zucchini Chips with Parmesan

Air Fryer Zucchini Chips are a super easy appetizer or snack! These zucchini chips are dipped in bread crumbs, Parmesan and seasonings for an amazing crunch. This is a great way to use up some fresh zucchini. This air fryer zucchini works great for game day, a celebration or every day. (Seriously, who needs an excuse to enjoy an irresistible snack like this? Not me!) Dip in your favorite sauces such as marinara for a fantastic combo.
My husband couldn’t keep his hands off these as they came out of the air fryer. My oldest son loved dipping them in marinara and said they taste like little pizzas. He couldn’t even tell they were vegetable based so I consider that a win. If you’ve never tried zucchini chips before, they are the air fryer appetizer you didn’t know you were missing, much like this bacon wrapped shrimp. So good!

Zucchini Chips Ingredients
To make these zucchini chips you’ll need the following basic ingredients:
- fresh zucchini (small to medium in size)
- panko bread crumbs (plain)
- shredded Parmesan cheese (you can use the powder variety as well)
- garlic powder
- salt
- pepper
- egg
- cooking spray
While the plain variety of bread crumbs was used here, Italian style Panko bread crumbs would be tasty. I would reduce the amount garlic powder, salt and pepper since that is typically found in Italian style. I also recommend offering your favorite dipping sauce such as pizza sauce or spaghetti sauce.
How to Make Zucchini Chips
One medium (or two small) fresh zucchini is all you need to make this recipe. You’ll want to wash then slice your zucchini into 1/8 inch slices. You don’t want them too thin or too thick, but consistent slicing is really important so they are all done at the same time. I ended up with approximately 36 chips but this will vary greatly depending on your zucchini. A large or extra large zucchini doesn’t work great for this recipe so save those humongous zucchinis from your garden for another recipe using shredded zucchini like this zucchini brownie or cheesy zucchini rice!
Exactly how much of the panko bread crumbs and cheese mixture that you’ll need will really depend upon the size of your zucchini. Mine was on the small side so I did have some extra breading left over. TIP: Split your breading mixture in half before starting. When it starts to clump together from the egg, you can start over with a fresh breading so it continues to coat your zucchini chips well.
Once you’ve sliced your zucchini and mixed up your breading ingredients, you’ll want to dip your slices into a beaten egg. Make sure you generously coat your zucchini slices or the breading will not stick very well. Place them on a baking tray until you are ready to cook.
How to Cookie Zucchini in an Air Fryer
If you have a smaller basket style air fryer like me, you’ll need to cook in several batches. You’ll want to make sure your zucchini is in a single layer and not touching for the best results. (Make sure you have fully preheated your air fryer before cooking!)
Cook for 9 to 11 minutes or until browned and crispy. Flip zucchini chips over halfway through cooking to brown both sides evenly.
Remove from air fryer and serve immediately. This air fried zucchini does taste best when they are hot out of the air fryer.
Serve with your favorite easy pizza sauce or spaghetti sauce for dipping. This is optional but really adds to the flavor.

Baked Zucchini Chips
No air fryer? No problem! You can still make these zucchini chips in your oven. You’ll want to make sure your slices are thin so they crisp well. Bake at 450 degrees for 30 minutes or until browned and crispy. Keep a close eye on them so they don’t burn! If your oven isn’t hot enough or the slices are too thick they will just be soft and not crispy.
Air Fryer Zucchini Chips
Ingredients
- 1 fresh zucchini small to medium in size
- 1 cup panko bread crumbs
- 1/2 cup shredded Parmesan cheese
- 1/4 teaspoon garlic powder
- 1/2 teaspoon sea salt
- 1/4 teaspoon freshly ground pepper
- 1 egg beaten
- cooking spray optional
- pizza sauce or spaghetti sauce warmed (optional)
Instructions

Preheat air fryer to 375 degrees Fahrenheit.

Slice zucchini into 1/8 inch slices.

Beat egg in small bowl.

On medium plate or small bowl, mix together panko bread crumbs, cheese, garlic powder, salt and pepper.

Dip zucchini slices in egg then generously coat both sides of zucchini with bread crumb mixture.

Place a baking tray and repeat. Spray top of zucchini chips with cooking spray (optional)

Place in air fryer basket in a single layer, avoiding touching together for best results. Bake for 9 to 11 minutes or until golden brown, turning over halfway through cooking. Repeat as needed.

Serve immediately with warm pizza sauce for dipping.
