Dill Aioli (with Lemon, Garlic and Mayo )

This Dill Aioli with mayo is a refreshing option for flavoring your favorite dishes including salmon, crab cakes, potatoes, chicken or even as a dip for veggies or fries! Only takes 5 minutes to whisk up this sauce including lemon and garlic.
What is Aioli?
An aioli is a delicious sauce with a extra virgin olive oil base and mixed with garlic, salt and usually includes egg and lemon. It is very versatile and additional adds ins like the dill found in this recipe really add. Before anyone comes at me saying this isn’t traditional aioli because it starts with mayo and not extra virgin olive oil , I’m going to tell you now….I know. Sometimes you just want something simple. Starting with store bought mayonnaise doesn’t take away from the delicious flavors happening in this aioli and other recipes like this chimichurri aioli.
If a traditional, authentic aioli is what you are looking for, I’m sorry but this isn’t that recipe. Aioli has really become to known as fancy mayo so there is no need to do that extra step of emulsifying the oil and garlic if you are short on time. It is totally up to you. Dill Aioli Ingredients
Only a few basic ingredients are required to make this garlic dill aioli.
- mayo
- fresh garlic
- fresh dill (or dried dill)
- 1 lemon (to use for both lemon juice and lemon zest)
- sea salt
- freshly ground pepper
I used frozen dill that I had leftover from harvesting my dill this past spring. It worked great but you can use fresh dill or substitute dried dill if needed. If you prefer a stronger garlic flavor you can add a bit more but I find 3 cloves to be the perfect amount without being overpowering.
How to Make Aioli with Mayo
It really doesn’t get much easier than this recipe. Simply whisk all ingredients in a small bowl until well combined.
I recommend giving it a chance to chill in the refrigerator for at least 30 minutes. Let those flavors mingle a bit for best results but it isn’t required.
That’s it! It doesn’t get much easier than this dill aioli recipe. I served this lemon dill aioli with my pan fried walleye last week and it was such a nice change from the usual tartar sauce! Dill Aioli
Ingredients
- 1 cup mayo
- 3 cloves minced garlic
- 1 tablespoon fresh dill or 1 teaspoon dried dill
- 2 teaspoons lemon zest
- 1 tablespoon fresh lemon juice
- 1/2 teaspoon sea salt
- 1/4 teaspoon freshly ground pepper

In a small bowl whisk all ingredients together.

Chill for at least 1/2 hour before serving for best results.
Recipe Notes
To thin out this aioli for fish, you can add 2 to 4 tablespoons milk to get your desired consistency.
Good for several days stored in an airtight container in your fridge.
