Frozen Strawberry Pie with Cream Cheese

Frozen desserts are a family favorite and we love a good freezer pie. Not only are they refreshing on a hot summer day, but they are so easy to make in advance of summer parties or to have on hand when the mood for a sweet treat strikes. This frozen strawberry pie recipe is a classic strawberry dessert and fits in with any celebration or event, including patriotic holidays like Memorial Day, 4th of July and Labor Day!
Frozen Strawberry Pie Recipe Ingredients
To make this strawberry frozen pie, you’ll need the following ingredients
- graham cracker crust*
- cream cheese
- instant cheesecake pudding or vanilla pudding
- milk
- fresh strawberries
- COOL WHIP whipped topping
- strawberry ice cream topping
I made this recipe with a 9 inch crust. You could also increase the size if you would like a slightly larger pie, but it will make the pie thinner.
This recipe was tested with the full fat versions of cream cheese and whipped topping. You can swap out light versions if preferred, but keep in mind that it could change the texture, flavor, and stability. I think it would still be delicious.
You can make a homemade graham cracker crust, but I opted to keep it easy with a store bought graham cracker crust, like I did with this recipe for peanut butter pie. (That pie is rich, sinful and impossible to resist. So good!!) Doing so makes it easy to store in the freezer with plastic top and also extra portable with a throwaway pie plate.
This recipe uses strawberry ice cream topping or strawberry dessert sauce in a jar instead of strawberry jam or a strawberry puree.
How to Make Frozen Strawberry Pie
The steps to making a frozen strawberry pie with Cool Whip is pretty straightforward. You’ll want to start by beating your softened cream cheese until smooth. Make sure your cream cheese is at room temperature or you will have little lumps.
Gradually beat in your milk, then add your cheesecake or vanilla instant pudding mix. Beat for two minutes.
Fold in chopped fresh strawberries, strawberry sauce, and whipped topping until fully combined.
Pour this pie filling into your graham cracker crust. If you are using a 9 inch pie crust, this will fill it all the way to the top. Cover and freeze. (I used the clear plastic cover that comes with the store-bought crust but plastic wrap will also work.)
You’ll want to freeze until firm, ideally overnight or at least 8 hours. Before serving, remove this icebox pie from the freezer and let it sit at room temperature at least 15 minutes. Exact time will vary. If you would like a softer pie, you can leave it out longer.
Top your strawberry pie with additional fresh strawberries for garnish, if desired.
I like to add whipped cream along with halved strawberries or sliced strawberries to each slice. But you can also use homemade whipped cream or extra whipped topping. (You will have extra if you are using an 8 oz. tub of COOL WHIP since the 1 1/2 cups required for this recipe is only half a tub.)
The longer you let your pie sit at room temperature, the fluffier it will get. So if you find this pie is too firm, just let it rest a bit more. It’s so good!!

Ingredients
- 1 6 oz. prepared graham cracker crust (or 9 inch homemade)
- 1 8 oz. cream cheese, softened
- 1 3.4 oz box vanilla instant pudding (or cheesecake flavored)
- 1 cup milk
- 2 cups fresh strawberries chopped
- 1/2 cup strawberry ice cream topping
- 1 1/2 cups COOL WHIP whipped topping, thawed
Optional Toppings:
- additional strawberries
- whipped cream or whipped topping
Instructions

In large bowl, beat softened cream cheese until smooth. Gradually beat in milk. Add instant pudding mix. Beat 2 minutes.

Fold in strawberries, strawberry ice cream topping and Cool Whip. Pour into graham cracker crust and spread evenly.

Cover and freeze until firm. (Ideally overnight or at least 8 hours.)

Before serving, remove from freezer and let sit at room temperature to soften, at least 15 minutes. Top with fresh strawberries and whipped cream or additional COOL WHIP, if desired before serving.

Cover and store any leftovers in the freezer up to three months..
