Gluten Free Banana Waffles

My kids love virtually any kind of breakfast food and enjoy it any time of day. Last week Wes and I were discussing what we should make for Mini Chef Mondays and we decided something with bananas would be delicious. We don’t live a gluten free lifestyle, but we both inspired by this recipe on AllRecipes to give Gluten Free Banana Waffles a try for something different.

I learned the hard way with the first waffle that you do NOT want to check on these waffles until they are fully cooked. Otherwise, it is really easy to tear the top off your waffle. You also want to be VERY liberal with your cooking spray or oil.

The first two waffles I made I did not add any sugar. They did require a lot more syrup on them because there is really no sweetness. Alternatively, you could add a bit of sugar to the batter to use less syrup later.

I wasn’t sure what my kids would think. They are rather picky and I figured they wouldn’t appreciate the different texture or flavors. But guess what? They devoured them!

Gluten Free Banana Waffles

Ingredients

  • 6 eggs
  • 3 overripe bananas
  • 1 teaspoon vanilla extract
  • 1/2 cup peanut butter melted 1
  • 1 cup oats
  • 1/4 cup sugar optional
  • ripe banana slices for garnish
  • butter
  • syrup

Instructions

  1. Preheat a waffle iron.
  2. Whisk eggs, bananas, and vanilla extract together in a large bowl until smooth. Stir peanut butter into the egg mixture until smooth. Fold oats and chocolate chips through the egg mixture.
  3. Spray waffle iron liberally with cooking spray or brush oil over surfaces.
  4. Cook on iron according to manufacturer's instructions, being careful not to lift lid until fulled cooked, about 3 minutes.
  5. Gently remove with rubber scraper.
  6. Top with butter ,banana slices and syrup. Serve immediately.
  7. (Makes three large Belgian style waffles)
