Peanut Butter and Jelly Mini Pancake Stacks for School Lunch

School started this week for my kids and once again I’m searching for school lunch ideas.   I started out strong last year but towards spring my kids fell into their typical rut, not knowing what they want in their lunchbox. My boys were tired of the same old stuff but couldn’t give me any new ideas. Peanut butter and jelly sandwiches became a staple, even as I asked them to consider more variety. This year I’m armed with a new pb&j recipe idea that is quick and easy but definitely not boring!  These peanut butter and jelly mini pancake stacks are a fun way to serve a classic lunch. Who can resist?

While I’m serving up these mini stack pancakes for lunch, they could also work well for a quick breakfast on busy school mornings.  Either way, they are sure to add some variety into your child’s day!

Peanut Butter and Jelly Pancake Stacks Ingredients

These mini pancake stacks require just a few key ingredients:

  • mini pancakes (purchased or homemade)
  • preserves, jam or jelly
  • peanut butter
  • strawberries (optional for garnish)

You’ll also need bamboo forks or you can substitute toothpicks or mini skewers. Our family branded peanut butter and jelly with mini pancakes and fresh fruit

Family Fare sent me a few items from their own brand, Our Family Products including peanut butter, strawberry preserves and shark fruit snacks which worked perfectly for this special back to school lunch. They taste great and are an affordable option for back to school lunches!

How to Make Mini Pancake Stacks

If you are using frozen mini pancakes you’ll want to start by heating up your pancakes to room temperature. Placing both the peanut butter and jelly on one pancake can get messy so I opted for three total pancakes. I added peanut butter to the bottom pancake,  strawberry preserves to the middle pancake and added one more pancake to the top. To finish it off, I included a fresh strawberry as a garnish.

I used three mini pancakes for each skewer and a total of nine mini pancakes for each serving, but you can adjust for your child’s appetite.

How do Mini Pancake Stacks Taste?

You might be wondering how these pb&j pancakes taste at room temperature. Trust me, I had wondered the same thing. Because the mini pancakes are serving as the bread in a peanut butter and jelly sandwich, they really don’t need to be warm.  They simply taste like a sweeter bread since they aren’t being served with butter and syrup.

Peanut Butter and Jelly Mini Pancake Stacks

Kids will love these peanut butter and jelly mini pancakes stacks for school lunch! This quick and easy lunch recipe is perfect for any pb&j lover. Who says you can’t enjoy a classic breakfast and lunch at the same time?

Ingredients

  • 9 frozen mini pancakes, thawed purchased or homemade
  • 1 tablespoon Our Family Peanut Butter creamy or crunchy
  • 1 tablespoon Our Family Strawberry Preserves or your favorite jam or jelly
  • 3 fresh strawberries

Instructions

  1. Spread peanut butter on top of one mini pancake

  2. Add additional mini pancake and spread preserves on top.

  3. Top with an additional mini pancake.

  4. Push bamboo fork into fresh strawberry and skewer your mini pancake stack. Repeat process with remaining pancakes.

  5. Serve at room temperature.

Recipe Notes

You can substitute your favorite flavor of jam, jelly or preserves.

Bamboo forks work best but a toothpick or mini skewer can be used instead.
