Soup just might be my favorite meal. Really, what is not to love about soup? (I won’t turn down a good casserole either, like hamburger and hash brown casserole with cream of mushroom soup.) I live in Minnesota so of course a hot soup to warm up is really appreciated for 9 months out of the year. (Especially by my 14 year old son who will literally gobble up 4 bowls of this Zuppa Toscana.) Plus soup for dinner offers a flexible serving time, easy to feed a crowd, and makes for great leftovers. I haven’t tried a soup yet that doesn’t taste just as good, if not better, the second day.  This taco soup recipe is a twist on traditional tacos, and it’s super easy to make. This delicious taco soup is packed with flavor and only takes 7 cans to make! This recipe requires minimal effort and is great for busy families. The hardest part is browning some ground beef, chopping an onion, opening cans and rinsing some beans. Everything else is literally dump into the pot and go. It is essentially fool proof and has very little cleanup. (You are welcome!)

7 Can Taco Soup Ingredients

Yes, this delicious and easy taco soup can be made with just 7 cans of ingredients along with some ground beef, onion and two seasoning packets. You’ll need the following:

  • ground beef
  • onion
  • ranch salad dressing and seasoning mix
  • taco seasoning mix
  • chicken broth
  • diced tomatoes
  • Rotel diced tomatoes
  • whole kernel corn
  • chili beans
  • black beans
  • pinto beans
  • your favorite taco toppings for garnish (optional)’

If you aren’t a fan of purchased seasoning mixes, you can certainly swap out your own in this recipe. I use them to make dinner a little faster, like in this recipe for taco casserole.  Try substituting three tablespoons of homemade taco seasoning and four tablespoons ranch seasoning mix instead.  There are so many great recipes that include a ranch seasoning packet, like these Chicken Bacon Ranch Sliders that go beyond traditional dressing. I love having a packet or two on hand for easy dinners.

You can also try different bean combinations and swap out ingredients that you prefer such as kidney beans instead of pinto or black beans. If you prefer this to be a thinner soup, you can add in another can of chicken broth.

How to Make 7 Can Taco Soup

This easy taco soup recipe can be on your table in 45 minutes or less. You’ll want to start by chopping up your onion and browning the ground beef and onion over medium heat. Drain grease.

While your ground beef is cooking, I recommend opening up your cans. I do rinse and drain the black beans and pinto beans. Did you know that rinsing your beans will reduce gas? Trust me, you’ll thank me later. You are welcome.

Add in seasoning mixes, chicken broth, diced tomatoes, Rotel diced tomatoes, corn, chili beans, black beans and pinto beans. This part is so simple since you are literally just dumping ingredients into the pot. No measuring required!

Bring up to a boil over medium high heat. Reduce heat and simmer, at least 30 minutes , stirring occasionally.

Slow Cooker Taco Soup:

If you’re looking for an even easier way to make this soup, you can also cook it in a slow cooker. Simply brown your ground beef, drain the grease then add all of the recipe ingredients to the crockpot. Stir and let it cook on low for 6-8 hours. This is a great option if you’re busy or want to make ahead of time.

Is This Taco Soup Spicy?

No, this taco soup recipe is not at all spicy. However, if you’re looking to give it a little kick, you can always add in some diced jalapeños, a can of green chilies or hot sauce to taste. My husband added some of his favorite hot sauce into his bowl and he loved the results.  This recipe is full of flavor and a great base recipe for everyone, regardless of their personal preference for spicy foods. The taco seasoning and ranch seasoning packet is all you need. You would never guess there is ranch dressing mix in this soup.

Ingredients

  • 1 lb lean ground beef
  • 1 large onion chopped
  • 1 envelope 1 oz ranch salad dressing and seasoning mix
  • 1 envelope 1.25 oz taco seasoning mix
  • 1 can 14.5 oz chicken broth
  • 1 14.5 oz can diced tomatoes, undrained
  • 1 10 oz can of Rotel diced tomatoes, undrained
  • 1 15.25 oz can of whole kernel corn, undrained
  • 1 16 oz can chili beans, undrained
  • 1 15.5 oz can black beans, drained & rinsed
  • 1 16 oz can pinto beans, drained & rinsed
  • shredded cheese sour cream, diced green onion, sliced jalapeno, diced avocado, diced tomatoes, chopped cilantro, sliced black olives, tortilla chips or strips (optional garnishes)

Recipe Notes

Want a thinner soup? Add an additional can of chicken broth.
Can substitute your favorite canned beans for the black beans and pinto beans such as light or dark kidney beans.
Swap out seasoning packets with 3 tablespoons homemade taco seasoning and 4 tablespoons homemade ranch dressing mix.

Slow cooker instructions:

Brown ground beef and onions. Drain. Add all ingredients (besides garnishes) to a slow cooker, cover and cook on high for 6 to 8 hours. Keep warm until ready to serve.
